Want a nice, crispy crust? The night before, place it, flesh-side down, in a bowl, rub the rind with baking soda, and leave it uncovered in the refrigerator.
Roast in the oven for 2 hours at a low temperature (130°C) covered, then open for 10 minutes at 220°C for a crispy crust.
